Fibonacci affectionately known as "The Shepherds Cheese" was inspired by my last visit to Italy.

2007 Tasting Notes
The paste is velvety, rich and clean giving herbaceous hints of the pasture according to the time of the year.
Best in spring, this cheese is suited to the cheese plate with seasonal fruit.
Fibonacci (Leonardo of Pisa) 1175-1250 was an Italian mathematician that promoted the introduction of the decimal number system to Europe. He also postulated a series of numbers, since named the Fibonacci numbers, that, interestingly, also relate to many events that occur in nature.
We named this cheese after Fibonacci at dinner when we tasted the first batch of the cheese for
the first time. The two of us tried three different cheeses with 5 different breads. It was 8pm,
surely it must have been the 13th day of the month...
The Fibonacci number sequence: 0,1,1,2,3,5,8,13,21,34,55,etc...
