Virgo is wonderfully sharp with very fresh up front flavours. The lightness and acidity of this cheese makes it perfect for a relaxed afternoon lunch.

Tasting Notes

While Virgo appears to be a very simple cheese the flavour profile is complex, as it matures it is one of my favourite.

The curd is gently ladled into hoops and allowed to drain over 3 - 4 days. The result is a dense creamy texture.

Woodside make a small quantity of Virgo weekly with fresh goat milk delivered to the factory from a local goat farmer.
